The Municipality of Ferrere is the seat of the Associazione dei Produttori di Salame Cotto Monferrato and in Ferrere there are four producers of this typical Monferrato salami.
An IGP for Salame Cotto Monferrato for now is the first goal. The foundation stone for a path of qualification and promotion of one of the most exclusive and traditional products of a circumscribed area of southern Piedmont has been laid.
The Gal of the Basso Monferrato Astigiano did it within the framework of the Local Development Program of the Regione Piemonte, for the realization of a Salame Cotto Monferrato project that tends to provide a common productive framework of reference to all pork butchers and packers of pork of the Monferrato territory. The call, to which Coldiretti Asti, Asti Chamber of Commerce, AgenForm, Onas and the producers of Monferrato collaborated, was mainly intended to create a production disciplinary that, leaving intact the specific production characteristics of each company, provides “equal for all” indications regarding the supply of the raw material, the origin, and the quality of the latter.
In 2015, the Municipality of Ferrere organized an event entitled “Il Salame Cotto Monferrato incontra la Barbera” in collaboration with the Municipality of San Damiano d'Asti for the enhancement of the two products. Salame Cotto Monferrato has obtained a space at the Salone del Gusto in Turin, inside the Regione Piemonte stand. To make the product known it was discussed in a conference with the Agriculture Councilor Giorgio Ferrero and at the end of the meeting it was possible to make a tasting with the many visitors.
In 2016 the ONAS (Organizzazione Nazionale Assaggiatori Salumi) in collaboration with the Municipality of Ferrere organized its two-day training course for teachers and tasters. One hundred and fifty tasters from all over Italy were hosted for the conference in the Church of Battuti and in Casa Carolina, staying in the Ferrere structures and in neighboring countries.
In 2018 Ferrere held a qualification course for the production of meat organized with the training agency AgenForm and the Regione Piemonte where 18 young people from all over Piedmont participate.
